I will be looking into the preservation of food. My primary interest is in fermentation, but as my interests change and evolve, I’m sure I’ll be looking at another modes of preservation as well.

“The chemical breakdown of a substance by bacteria, yeasts, or other microorganisms, typically involving effervescence and the giving off of heat.”
Fermentation is the process in which sugars are converted by microorganisms into alcohol, acids, and/or gases. It is an anaerobic metabolic process that predates man and happens on its own in nature.
